“We at the Winding Stair have been committed to supporting artisan producers since we opened. Not only are we passionate about naming them on our menu, but we champion their names and produce whenever we can. The food you will eat at this restaurant comes from within a three hundred mile radius and we revive traditional recipes that evoke nostalgia and demonstrate provenance at every opportunity. Our beef is sourced from Kettlye Meats, our lamb from McLoughlin’s butchers and our black pig pork from Co. Fermanagh. Ummera smokehouse supply us with smoked chicken and Fingal Ferguson with their chorizo. Seafood suppliers include Goatsbridge Farm, Co Kilkenny and Ted Browne, Dingle for his Kerry prawns and Dingle Bay crab”.
