Christy Stapleton speaks about the experience of growing organic culinary herbs and vegetables on his family farm at Kiltegan Co. Wicklow. The second speaker is, Mary Kelly. She tells the story of how she and husband Gerry succeeded with great effort in establishing an organic dairy farm near Mullingar, Co.Westmeath. Moon Shine Organic Farm is a quality producer of certified organic milk, Emmental cheese and a range of yogurts flavoured with herbs and fruit. Starting at 12 noon, the talks run consecutively. |

At 1.30 Margaret McDonnell and Peter Young will give a short talk on what exactly organic chicken is and how it is produced.
At 2pm organic food tasting and cookery demonstration will take place. This organic feast includes Ballysax organic chicken, Castlefarm vegetables and salads, Tipperary Organic Icecream (it is made with Castlefarm milk!)
