 Bacon Salad with Cashel Blue Dressing 

This is a firm favourite, easy to do and great flavour. 

Serves 4 
Bacon Salad with Cashel Blue Dressing 
Ingredients
  • 8 slices of Quality Assured streaky Bacon, chopped
  • 100g (4 oz) mixed leavesĀ 
  • 4 tomatoes, chopped, or 8 baby plum tomatoes
 
Dressing 
  • 3-4 tablesp. groundnut oil
  • 1 tablesp. wine vinegar
  • 1 tablesp. whole grain mustard
  • 50g (2 oz) Cashel Blue cheese, crumbled
 

To Cook

Method

Start with the dressing. Whiz the oil, vinegar, mustard and cheese in the processor. Taste for seasoning. Cook the bacon in a pan until crisp. In a large bowl mix the leaves and tomatoes together. Add the warm bacon and any juices in the pan. Mix in the dressing and serve immediately.
