Renowned seafood chef Martin Shanahan creates 5 tasty new hake dishes specially for Bord Bia
As an island nation, we’re lucky to have a plentiful supply of fantastic fish at our fingertips like hake, haddock and whiting which is healthy to eat and simple to cook. As well as being delicious, white fish is also a versatile ingredient to cook with, as one type can easily be swapped for another in a recipe.
Fish cook quickly so be careful not to spoil it by overcooking. A good rule of thumb is to allow 10 minutes per 2.5cm of thickness – simply increase or reduce the time needed depending on the thickness of the piece of fish you’re cooking.
