 Baked Potatoes ‘n’ Pork 

 

Serves 4 
Baked Potatoes ‘n’ Pork 
Ingredients
  • 450g (1 lb) lean pork mince
  • 1 onion, finely chopped
  • 2-3 cloves garlic, chopped
  • 1 chilli, chopped (plus seeds if you like it hot!)
  • 1 dessertsp. fresh ginger, grated
  • 1 red pepper, chopped
  • Juice of 1 lime (optional)
  • 1 can of chopped tomatoes 
  • Salt and pepper
  • 4 large hot baked potatoes
 
Suggested toppings  
  • Celery and Pepper Salsa
  • Crispy bacon, chopped
  • Soured cream
 

To Cook

Method
Heat a non-stick pan, brown the pork well.  Stir in the onion, garlic, chilli, ginger, red pepper and lime juice, can of tomatoes and season well.  Cook for 8-10 minutes.
 
Serving Suggestions
Split the potatoes in four to open.  Allow each person to fill the potatoes at the table and pass around the toppings.  Serve with roasted peppers tossed in oil, lemon juice and balsamic vinegar
