Beef is 100% Irish Hereford and lamb is sourced locally from the Ring of Kerry and Ring of Beara mountains through local butcher Paudie Randles. Chicken is 100% Irish free range and pork is sourced from our own Rare Breed Pedigree Saddleback pigs, reared less than a mile from the restaurant. Seafood is landed at Dingle and Castletownbere and Lee Strand Co-op supply all dairy products."
