The brand's mission is to make healthy eating easy. Its recipe boxes contain pre-portioned ingredients and a recipe booklet. Sustainability is at the heart of its brand: fresh local ingredients, no waste; grass-fed native-breed beef, free-range chicken and UK-landed fresh fish. Its ‘One feeds two’ campaign donates a school meal to a child in poverty for every meal purchased. Today with 80-full time employees, Mindful Chef has shipped over 12 million meals to more than 205,000 customers and is forecasting a turnover of £80 million this year.
Tim Lee has been CEO of Mindful Chef for two years. Prior to that he worked with M&S online, managing the overall strategy and price & promotions of the Food business. During his tenure with Tesco, Tim was Director of produce and Director of food marketing. Tim also managed Tesco’s US business - Fresh & Easy Neighborhood Market stores, with over 200 outlets across California, Nevada & Arizona.
