Copy TextTo prepare the crab meat: Check through the crab meat and discard any pieces of shell or sinew.
To cook the pasta: Cook the linguini in a large saucepan of boiling water for 8-9 minutes or as per packet instructions. Drain the pasta reserving 100mls of the cooking liquid. Return the pasta to the saucepan.
To make the sauce: Heat 2 tablespoons of oil in a large frying pan over a medium heat. Add the onion and fry for a few minutes then add the garlic, stirring now and then, cook for 5 minutes until softened but not browned. Add the chilli, tomatoes and reserved pasta liquid to the onions, warm through on a gentle heat. Add the mixture to the pasta, stir through. Season with salt and pepper. Add in the crab, coriander, lime juice and zest and mix well.
To serve: Serve with some crusty bread and a green salad.
