Stewed Rhubarb

  • 500g fresh rhubarb, chopped into 3cm pieces
  • 150g sugar
  • 1 vanilla pod (optional)
  • 2 tbsp water

  1. Place the rhubarb, sugar, vanilla pod and water in a large pot over a medium heat.
  2. Bring the mixture to a boil, then turn the heat down and simmer for 15 minutes until the rhubarb is tender and broken down to your desired consistency.
  3. The stewed rhubarb can be eaten straight away - top with natural yoghurt, granola, custard or preferred toppings. The rhubarb can be kept covered in the fridge for up to a week.
