Method
Copy Text- Place the rhubarb, sugar, vanilla pod and water in a large pot over a medium heat.
- Bring the mixture to a boil, then turn the heat down and simmer for 15 minutes until the rhubarb is tender and broken down to your desired consistency.
- The stewed rhubarb can be eaten straight away - top with natural yoghurt, granola, custard or preferred toppings. The rhubarb can be kept covered in the fridge for up to a week.
