Thai Green Curry with Pork

Ingredients

    • 1 large pork steak, cut into thin strips
    • 1 tablesp. rapeseed or olive oil
    • 1 onion, finely chopped
    • 1 tablesp. green curry paste
    • 400ml tin low fat coconut milk
    • Salt and freshly ground black pepper
    • 1 red chilli, sliced
    • 2 garlic cloves, peeled and chopped
    • 1 tablesp. fish sauce
    • Half tablesp. Sugar
    • Zest of a lime
  • Spicy Cucumber Salad

    • 2 cucumbers, seeds removed and sliced
    • 1 tablesp. fish sauce/soy sauce
    • 1 tablesp. oil
    • 1 tablesp. Lemon juice
    • 1 tablesp. sugar
    • 1 red chilli slices
    • 2-3 shallots, sliced

    To garnish:

    • 1 lime, cut into wedges
    • Handful of beansprouts
    • Handful basil leaves and coriander, roughly torn
    • Sliced scallions and red onion

Main

    • 1 large pork steak, cut into thin strips
    • 1 tablesp. rapeseed or olive oil
    • 1 onion, finely chopped
    • 1 tablesp. green curry paste
    • 400ml tin low fat coconut milk
    • Salt and freshly ground black pepper
    • 1 red chilli, sliced
    • 2 garlic cloves, peeled and chopped
    • 1 tablesp. fish sauce
    • Half tablesp. Sugar
    • Zest of a lime

Salad

  • Spicy Cucumber Salad

    • 2 cucumbers, seeds removed and sliced
    • 1 tablesp. fish sauce/soy sauce
    • 1 tablesp. oil
    • 1 tablesp. Lemon juice
    • 1 tablesp. sugar
    • 1 red chilli slices
    • 2-3 shallots, sliced

    To garnish:

    • 1 lime, cut into wedges
    • Handful of beansprouts
    • Handful basil leaves and coriander, roughly torn
    • Sliced scallions and red onion

Heat the oil in a large pan over a medium heat. Sauté the onion for about 5 minutes until softened.

Stir in the curry paste and cook for a moment or two. Add the coconut milk and simmer for 2-3 minutes. Season the pork with salt and black pepper and add it to the pan along with all the remaining ingredients

Stir well, cover and simmer gently for 5-7 minutes until the pork is cooked. The amount of time depends on how thin the strips of pork are

To make the Spicy Cucumber salad: mix the cucumber with all the other ingredients.

To serve: Divide the curry between four plates or bowls and garnish with the lime, beansprouts, basil, coriander, scallions and red onion.
