Copy Text1. Bring a large saucepan of water to a boil over high heat. Add the parsnips and carrots and cook for 6-8 minutes until tender when pierced with the tip of a sharp knife.
2. Meanwhile, melt the butter in a pan over medium heat and add the onion and thyme. Cook for 6-8 minutes until soft and translucent.
3. Drain the parsnips and the carrots in a colander and allow to steam dry for one minute. Mash with a potato masher until smooth, then stir in the buttery onions. Serve hot, topped with some chopped fresh parsley and an extra knob of butter.
