Ralph Halsam has been farming at Mossfield Farm in Clareen, outside of Birr in Co. Offaly since 1970. Ralph converted to organic farming in 1999 and developed a Gouda style cheese which was launched in 2005. All the milk used comes from Ralph’s own herd of 115 Frisians which graze the clover filled pasture of Ralph’s 300-acre farm on the foothills of the Slieve Bloom Mountains.

The cheese has won numerous awards during its time on the market including, Best Overall Organic Product at the National Organic Award 2010. All Mossfield cheese is handmade using organic milk from the family farm, is suitable for vegetarians, and comes in a range of flavours including Tomato and Herbs, Garlic and Basil, and Cumin Seed. Their young and herbed cheeses are sold after three months of ripening. Their mature cheese is at least eight months old before being sold.
