Healthy Quick Doner Kebabs

Healthy and quick, these doner kebabs can be made with Quality Mark beef or lamb mince, and makes the absolute most of seasonal vegetables.

Ingredients

1 tbsp rapeseed oil
1 onion, peeled and sliced
1/2 red pepper, deseeded and sliced
1/2 yellow pepper, deseeded and sliced
1 courgette, cut in half longways and sliced
500g lean steak mince (or turkey mince)
1 tsp onion granules
1/2 tsp Garlic salt
1/2 tsp Chilli powder
4 large wholemeal soft tortillas
1 lettuce, washed and shredded
1 tomato, sliced
1/2 cucumber, sliced

2 tbsp thick natural yogurt

The zest and juice of 1/2 a lemon

1 garlic clove, crushed

Sriracha sauce

4 large wholemeal soft tortillas
1 lettuce, washed and shredded
1 tomato, sliced
1/2 cucumber, sliced

Side

2 tbsp thick natural yogurt

The zest and juice of 1/2 a lemon

1 garlic clove, crushed

To make the sauce, mix yogurt, garlic, lemon zest and juice in a small bowl. Set aside.

Heat the oil in a large non-stick frying pan and fry the onion for 2 - 3 minutes until soft; add the peppers and courgette and cook for 5 minutes until soft.

Season well and remove to a large bowl and keep warm.

Mix mince, onion granules, garlic salt, and chilli powder in a large bowl. Lay the wholemeal wraps onto a board and press 1/4 of the meat mixture onto each tortilla. Spread it out thinly so it completely covers the tortilla.

Return a clean large non-stick frying pan to moderate heat, lay the tortillas into the frying pan meat side down, and cook one at a time for 5 minutes.

Press down with a spatula to ensure the meat is evenly cooked.

Use the spatula to remove from the pan to a warm plate.

Fill with warm vegetables and top with shredded lettuce, tomato and cucumber.
