- 120mls Greek yogurt
- 1 tbsp fresh parsley, chopped
- ½ teasp Dijon mustard
- 1 garlic clove, peeled and crushed

- 1 tomato, sliced
- Mixed leaves
- Potato Wedges

To prepare the haddock or hake: Put the flour, eggs and breadcrumbs into three separate bowls. Season the flour with salt and pepper. Mix the lemon zest into the breadcrumbs.
Season the fish then dip each piece into the flour, then the egg and lastly the breadcrumbs.
To cook: Heat the air-fryer for 3 minutes at 200°C.
Brush or spay a little oil over the basket. Place the fish in the basket and spray or drizzle over a little oil. Cook for 10-12 minutes at 200°C or until fish can be flaked with a fork. Timing will depend on how thick the fillets are. Half-way through turn the haddock or hake.

To serve: Cut the buns in half and toast the cut side. Put a little dressing on the lower half of each bun. Top with a slice of tomato followed by some lettuce, then the fish. Spoon on a little more dressing. Rest the top of the bun against the side and serve with potato wedges.
