  • 450 - 500g Bord Bia Quality Mark strawberries
  • 250g tub mascarpone cheese
  • 400g tin condensed milk
  • Decorations of your choice, to serve

This super easy ice cream is suitable for all ages to make and they can add any of their own extra toppings for fun. Experiment with hundreds and thousands of mini marshmallows or white chocolate drops. It will also make a fantastic Knickerbocker glory with crushed meringue, more fresh strawberries and candied nuts. The best part is that it doesn’t need an ice cream maker.

Cut the stalks off the strawberries and if they are still quite hard cut them into quarters. Place them in a flat-bottomed dish and mash to a purée with a potato masher – how smooth you want it is up to you.

 

Add the mascarpone and mash again until combined. Stir in the condensed milk until streaky but evenly mixed. Using a spatula, transfer to a plastic container and put in the freezer. Leave for 6 hours or overnight is best. Scoop into bowls or cones and decorate how you like.
