Bacon and Kimchi Fried Rice

Ingredients

3-4 slices of Bord Bia Quality Assured streaky bacon cut into small pieces (approximately 1cm)

1 small onion, diced

2 cloves garlic, finely diced

2 spring onion, finely sliced

100g kimchi, chopped

400g short grain rice, cooked

 

Sauce

1 tablesp. gochujang

2 tablesp. light soy sauce

1 teasp. pure sesame oil

½ teasp. gochujaru

¼ teasp. white pepper

 

To serve

Toasted white sesame seeds

In a bowl, mix all the ingredients for the sauce and set aside.

Heat the wok, add some oil. When hot, add the bacon and onion. Stir fry for 2-3minutes until they are golden brown.

Add the garlic, spring onion and kimchi and sauté for 1 minute. Now add the cooked rice and sauce. Stir fry for 2-3 minutes until everything is nicely combined.

Garnish with sesame seeds and a fried egg. Ready to serve.
