4 bacon chops/gammon steaks, approx. 150g each
Barbecue Sauce
- 5 tablesp. tomato ketchup
- 1 tablesp. honey
- 1 tablesp. white wine vinegar
- 1 tablesp. Worcestershire sauce
- 1 tablesp. smoked paprika
- ½ teasp. cayenne pepper
- 2 tablesp. olive oil

Preheat the oven Gas Mark 4, 180°C (350°F).
To make the barbecue sauce: simply combine all the ingredients, taste and season.Brush the bacon chops with about a tablespoon of the barbecue sauce.
Set them aside until you are ready to cook them. Reserve the remainder of the barbecue sauce to use when cooking the beans and the chops.
To cook the beans: Heat the oil in a medium saucepan. Add the onion, garlic, carrot and celery and sauté over a medium heat about 10 minutes or until they begin to soften.
Then add the beans, passata, thyme and all but one tablespoon of the remaining barbecue sauce. Season with a little salt and black pepper.
Cover and bring to the boil then reduce to a slow simmer and allow to cook for half an hour.
When you are ready to cook the chops place under a hot grill and cook for 3-4 minutes on each side, depending on the thickness of the chops. Brush the reserved barbecue sauce over the chops for the last few minutes. This will give them a lovely glaze.
Serve the chops with the bbq baked beans and potato wedges.
