Pork Wrap with Carrot and Apple Salad

Ingredients

  • 1 pork steak, approx. 400g, trimmed and cut in half length ways 
  • 8 medium wraps 
  • 2 Little Gem lettuce, leaves separated and roughly torn 
  • Salt and freshly ground black pepper 

 

Marinade 

  • 2 garlic cloves, peeled and chopped 
  • 2 tablesp. Dijon mustard 
  • 2 tablesp. honey 
  • 2 tablesp. soy sauce 
  • ½ tablesp. rapeseed or olive oil 
  • Juice of ½ lemon 

Carrot and Apple Salad 

  • 3 tablesp. olive oil 
  • Juice of 1 lime 
  • ½ teasp. Dijon mustard 
  • ½ red onion, thinly sliced 
  • 2 carrots, peeled and coarsely grated 
  • 2 crunchy eating apples, halved, cored and thinly sliced

Carrot and Apple Salad

  • Juice of 1 lime 
  • ½ teasp. Dijon mustard 
  • ½ red onion, thinly sliced 
  • 2 carrots, peeled and coarsely grated 
  • 2 crunchy eating apples, halved, cored and thinly sliced

To make the marinade: Combine the marinade ingredients in a dish or bowl large enough to take the pork. Add the pork and leave to marinate while you prepare the salad. 

To prepare the salad: Make the dressing first by combining the oil, lime juice and Dijon mustard. Season with salt and pepper and taste. Place the carrots, apples and red onion in a bowl, add the dressing and mix well. 

To cook the pork: Turn the grill or barbecue to high. Lay the pork on the grill rack and cook for five minutes on each side. Remove to a caving board and allow to rest for a couple of minutes.  

To serve: Slice the pork thinly and serve in the wraps with the lettuce and carrot and apple salad. Additional salad can be served on the side.
