Crunchy Parmentier potatoes with garlic & herbs

Ingredients

  • 1kg Queen potatoes, cut into cubes. 
  • Sea salt & pepper 
  • 4 garlic cloves crushed whole. 
  • 2-4 fresh rosemary or thyme sprigs 
  • 2 Tbsp olive oil

(If using oven) Preheat oven to Gas Mark 6, 200°C (400°F), and pre-heat an empty baking tray. 

Prepare the potatoes

Parboil potatoes for 10 minutes in a large pan of boiling water and season with a large pinch of sea salt. Immediately drain and leave to steam-dry for a couple of minutes.  

To bake the potatoes 

Put potatoes onto a large hot baking tray along with olive oil, garlic cloves and herbs. Season well, mix gently so each potato cube is coated well. Shake the tray gently to spread the potatoes out into a single layer.  

Roast for 30-35 mins, in a pre-heated oven at 200C/ Gas Mark 6. Turning halfway through, bake until the potatoes are golden and crisp on the outside and tender when pierced with a fork. To serve, sprinkle with fresh herbs.  

To roast in air fryer 

Preheat the air fryer to 200°C for 3 minutes. 

Cook and season potato cubes, following the method above, arrange in the air fryer basket and cook for 10 minutes, flipping them halfway through the cooking time. Air fry for an additional 10-15 minutes until the potatoes are nicely roasted. 

Once the potatoes are crispy, remove from the air fryer, and serve the deliciously crispy Parmentier potatoes as a side dish or to share at family & friend gatherings. Enjoy!
