Smashed Potatoes with thyme, paprika and garlic

Ingredients

  • 1 kg baby potatoes 

    3 tbsp olive oil 

    4 garlic cloves

    2 springs thyme

    pinch of paprika

    Sea salt and freshly ground black pepper.

    Roasted Irish veg to serve.

  1. Preheat the oven to 180°C. Put the potatoes into a pot and cover with water. Bring to the boil and simmer for 15 minutes until cooked.
  2. Drain and arrange on a roasting tray. Using a fork or potato masher, gently smash the potato so that it breaks up.
  3. Drizzle with oil, bash the garlic and put on the tray along with the thyme, paprika, salt and pepper.
  4. Bake in oven for 25-30 minutes until golden and crispy.
