Ingredients

  • 4 slices of wholemeal seeded bread
  • Mayonnaise
  • Butter
  • 2 ripe tomatoes - sliced ½cm thick
  • ½ a small red onion, sliced
  • Salt and freshly ground black pepper
  • 1 cooked beetroot, sliced
  • 2 radishes, sliced
  • 4 leaves of butter lettuce

 

Optional additions

  • 2 hard-boiled eggs, sliced
  • Coleslaw

Spread mayonnaise over two of the bread slices and butter over the others.

Layer the tomato and onion onto the buttered slices, then season with a little salt and black pepper. Add the beetroot, radishes, coleslaw and hard boiled eggs. Top with the butter lettuce, then sandwich together with the remaining bread.

Press down lightly, cut into quarters and enjoy!
