Chimichurri Sauce

Why not serve this with some delicious Ribeye steaks or with a Roast Leg of Lamb.

Ingredients

  • Handful of fresh coriander leaves, roughly chopped
  • Handful of fresh parsley leaves, roughly chopped
  • 1 shallot, finely chopped
  • Juice of ½ lemon
  • 1 teasp. white wine vinegar
  • 2 garlic cloves, roughly chopped
  • Pinch of chilli flakes
  • 3 tablesp. olive oil

Combine all the ingredients, except the oil, in a mini processor. You can also chop everything finely by hand. Whizz for a couple of minutes then add the oil, season with a little salt and black pepper and whizz again.
