Ingredients

  • 3 tablesp. rapeseed or olive oil
  • 1 tablesp. apple cider vinegar
  • Salt and black pepper
  • 2 medium cucumbers, roughly chopped
  • 4 ripe tomatoes, roughly chopped
  • 1 large head of Cos lettuce, roughly chopped
  • Handful of fresh dill, chopped
  • 4 scallions, sliced

In a small bowl, whisk together the olive oil and vinegar until well combined. (Alternatively, shake together in a jar with a tight-fitting lid). Season to taste.

In a large bowl, combine the cucumbers, tomatoes, lettuce, dill and scallions. Drizzle about half of the dressing over the salad and toss to coat the leaves.

Serve with the remaining dressing in a jug on the side.
