For the dressing:
- 60ml olive oil
- 1 tbsp lemon juice
- 1 tbsp orange juice
- 2 tsp Dijon mustard
- 1 tbsp honey
- 2 tsp poppy seeds
- Salt and black pepper

Copy TextAdd all of the dressing ingredients to a screw-top jar. Seal the lid and shake well until combined.
Layer the rocket, strawberries, Feta, pistachios and chicken in a large lunchbox.
Drizzle over enough of the dressing to coat, then close the lunchbox and shake to combine. Open the lunchbox and dig in.
