Tomato, Cucumber & Coriander Salad

This fresh and colourful salad will brighten up any barbecue or summer meal – no matter what the weather. It is really very similar to a salsa which makes it very versatile. It’s just delicious with burgers, sausages or any seared meat or fish for that matter. It is also perfect with fajitas or tacos, and you can add some finely chopped red or green chilli if you like a bit of heat.

Ingredients

  • 1 cucumber
  • 1 red onion, finely chopped
  • 6 ripe tomatoes
  • 20g packet fresh coriander
  • 1-2 teasp. extra virgin olive oil (optional)
  • sea salt and freshly ground black pepper
  • crusty bread, to serve (optional)

Cut the cucumber into quarters lengthways and remove the seeds, discard. Cut the remainder into dice and put in a bowl with the red onion.

Cut the tomatoes into quarters and remove the seeds, discard. Cut the tomato flesh into small pieces.

Strip the coriander form the stalks and chop the leaves. Scatter over the salad and then drizzle over the oil, if using. Stir gently to combine and season generously just before serving with some bread alongside, if liked.
