Pork Stir-fry with Mushrooms, Chilli and Mange-tout

Ingredients

    • ½ kg leg of pork or 3-4 loin pork chops, thinly sliced
    • 2 tablesp. oil

    Marinade

    • 2 tablesp. soy sauce
    • 1 dessertsp. cornflour
    • 1 tablesp. sesame oil
  • Sauce

    • 1 tablesp. oyster sauce
    • 1 tablesp. soy sauce
    • 125ml stock or water
    • 1 tablesp. rice vinegar
    • 1 teasp. sugar

     

    Vegetables

    • 2 cloves garlic, chopped
    • 1 dessertsp. ginger, chopped
    • 100g flat mushrooms, thinly sliced
    • 1 chilli, chopped
    • 100g mange-tout, cut in half

     
     

Main

  • Sauce

    • 1 tablesp. soy sauce

    • 1 tablesp. rice vinegar
    • 1 teasp. sugar

Mix the marinade ingredients together and add the meat. Heat a tablesp. of oil in a large pan or wok. Stir-fry the vegetables for 2-3 minutes. Tip the vegetables into a bowl.

Reheat the wok with another tablesp.oil. Stir-fry the meat in two batches until fully cooked.

Add all the sauce ingredients to the pan/wok, bring to the boil and simmer or 2-3 minutes. Return all meat and vegetables to the pan/wok, taste for seasoning.
