Could climate-informed menu options impact diners choices?
Yes, according to a recent study involving 250+ consumers undertaken by Universitat Wuzburg, Germany.
Researchers presented participants with two menu design approaches across nine hypothetical menus, looking to assess the impact of including carbon labels and modifiable dishes with high or low emission options. Participants were required to choose one dish from each menu. The results found that when carbon labels were present and moderations were offered, participants selected more climate-friendly dishes.
Despite the fact that the majority of studies examining factors that influence environmentally relevant food choices are focused on purchasing of groceries eaten at home, opportunities exist for hospitality outlets to address sustainability measures that matter to consumers when eating out of home.
A separate study undertaken by Nestle Professional, suggests that almost three quarters UK consumers think cafes, restaurants, pubs and fast-food chains could do more to support and promote sustainable diets on their menus.
